Serving the Perfect French Fry

Achieving French Fry Mastery from Fryer to Table

Crispy on the outside, fluffy on the inside, French fries remain America’s favorite way to eat potatoes. On-premise or off, amid economic highs and lows, they provide a simple pleasure in good times and a satisfying source of comfort and familiarity in the not-so-good ones. The beloved French fry also has a well-deserved reputation for being hard to hold. How do you maintain the perfect texture and presentation from fryer to holding to serving and keep your customers coming back for more?

The Fryer Formula

Whether you’re working with fresh cut potatoes or frozen product, you’ll need a fryer that can hold consistent temperatures and help you make the most efficient use of your oil while keeping it fresh.

Frymaster’s Filter Quick with EasyTouch electric fryers were designed to reduce operating costs by using 40% less oil (30 lbs.), while providing easy-access, closed cabinet fully automatic filtration. This easy-to-operate system encourages more frequent filtering, which preserves oil life and ensures consistent, great-tasting French fries and other fried foods. An optional integrated Oil Quality Sensor monitors the health of the oil, precisely indicating the point the oil needs to be discarded, which helps you accurately maintain the delicate balance between high food quality and optimal oil life.

Holding Perfection

Now that you’ve prepared a fresh, golden batch for a peak serving period, the next trick is to keep them hot, crispy, and looking delicious prior to serving. Hatco’s Glo-Ray Fry Holding Stations are designed to be placed next to your fryer, right where you need them, to safely hold fried foods at optimum serving temperatures without continuing to cook them. The combination of a thermostatically-controlled heated base and overhead ceramic heating elements maintains uniform holding temperatures, while a bottom trivet keeps fries lifted off the bottom of the station, promoting air movement and reducing the build-up of any moisture to ensure they stay crispy.

Presenting the Perfect Fries

It can be tempting to co-mingle fries on a plate with sandwiches and burgers, but juices from toppings, condiments, and the meat itself can soak into fries leaving them wilted and tasting like neighboring pickles or onions. Serving fries on their own in a specially designed vessel serves a variety of valuable purposes. From a food quality point of few, it prevents flavor transfer and protects their crisp texture. From a marketing point of view, great presentation is the most effective point of sale advertising you can find, while it also adds to perceived value, helping support menu pricing as either a shareable side or standalone appetizer.

TableCraft offers a variety of attractive and fun serving pieces such as their Brickhouse, Galvanized, and Lattice Collection Fry pails and cups to help you serve fries that look and taste like they just came out of the fryer. These designs also come in an assortment of sizes of platters and caddies for a unified style and memorable dining experience. All pieces are dishwasher safe.

With a wide variety of Frymaster fryers, Hatco holding stations, and TableCraft serving pieces to create a custom solution for one of America’s favorite menu items, we’re here to help you put your best fry forward and keep your customers coming back for more.
